mit PASTRY CHEF Hanna Kapitulnik

A graduate of the California Culinary Academy in San Francisco, Pastry Chef Hanna Kapitulnik has been working in the San Francisco Bay Area for the past ten years, in such restaurants as Le Mouton Noir (Saratoga), The Village Pub (Woodside), Zibibbo (Palo Alto), and Marche (Menlo Park).

In 2000/2001 Hanna served as the Executive Pastry Chef of the renowned King David Hotel in Jerusalem. While at the King David, Kapitulnik mastered the art of non-dairy baking and pastry production. She developed a vast repertoire of international desserts transformed to non-dairy recipes to satisfy Kosher rules, as well as to accommodate lactose intolerant customers.

In 2002, both of Hanna's daughters (ages 20 and 14 at the time) were diagnosed with Celiac disease. This prompted a major shift in the entire Kapitulnik family life. Concerned with the risks of gluten cross-contamination, Hanna decided to make her entire house gluten free. At the same time, she found herself drawn to the challenge of making gluten free versions of her family's favorite desserts. This often resulted in concerned calls from her eldest daughter, to whom she would send samples, wondering whether the delicious cakes were indeed gluten free. Thus Kapcakes was born, an assemblage of Hanna's most successful gluten free treats.
